Ingredients:
- 8 Slices bacon, cut into small pieces
⅓ Cup finely chopped onion
1 Cup flour
2 Tablespoons chopped fresh chives
1 Teaspoon baking powder
½ Teaspoon salt
⅛ Teaspoon cayenne pepper
⅔ Cup milk
1 Large egg, beaten
1 Tablespoon oil
1 Cup corn (Mielies)
½ Cup cheddar Cheese
Golden syrup or honey
Method:
- I in a medium frying pan, sauté the bacon pieces until they begin to brown add the onion and cook until bacon is crisp and onion is tender. Set aside 2 heaped tablespoons of the bacon mixture for topping. (I set it aside before the onion was added.)
- Combine the flour, chives, baking powder, salt and pepper in a bowl stir in the milk, egg and oil in, and then add the bacon mixture and cheese to the mixture. It will be thick; if you prefer a more runny mixture then you just add a little milk to dilute.
- Grease your frying pan with oil, heat and place spoonfuls of batter and fry until cooked, about 3-4 minutes depending on how thick your patty is. Stack pancakes per serving or on a large plate. Warm the honey and syrup then sprinkle the bacon and honey on the crumpets.
