This delicious chilli pap and sweetcorn bake transforms your pap dish from drab to fab in minutes. This side is best served at a braai with any grilled meat or fish. It can also be enjoyed as a meal on its own without an accompanying protein.
Chilli pap is so versatile it can also be served with roasts, and the ingredients are most likely already in your cupboard and fridge.

Ingredients:
Serves 6
- Half an onion, sliced
- 2 chillies sliced
- 2 tablespoons of oil
- 2 cloves garlic chopped
- 3 cups prepared pap
- 2.5 cups of grated cheddar or gouda cheese
- 1 can of sweetcorn with kernels
- 1 can of spicy Chakalaka
- Handful of chopped mint and coriander
Method:
Sauté your onions, chillies and garlic in a frying pan on a medium heat. Add the drained sweetcorn and a pinch of salt and pepper for flavour. Set aside to cool. Mix 1.5 cups of pap with the corn, mint and coriander and create the first layer in an oven dish. Spread half the can of Chakalaka over the top of the pap and sprinkle a little cheese on too.
Add the second layer of pap and top with the other half of the Chakalaka. Spread the remaining cheese over.
Bake in an oven preheated to 180˚C for 15-25 minutes.
Serve from oven to plate for the best results. Enjoy!
