A favourite South African sweet treat, butter biscuits are quick and easy to bake. They suit just about every occasion from birthdays to weddings, family gatherings to snacks. You can substitute the butter for margarine but it does affect the quality and the taste of the biscuits.

Ingredients
500g butter
1 tsp vanilla essence
1 cup icing sugar
1 cup corn flour
3 cups flour
Method
Preheat the oven to 180°C. In a mixing bowl, cream together the butter, vanilla essence and the icing sugar. Add the cornflour next and then the flour. It will form a soft dough. Roll out onto lightly floured surface and form shapes using cookie cutters. If you have a biscuit gun, fill and cut into shapes. Place on a greased tray and bake for 15 minutes.
When cooled you can dip into chocolate and add sprinkles.
