Hot chickpea salad with garlic & rosemary
Serves: One, generously
Preparation time: 5 minutes
Ingredients:
1 rosemary sprig
1 garlic clove
1 pinch chilli flakes
Handful whole almonds
1 400g can chickpeas
1. Place a frying pan above a medium heat. When hot, add 2 tablespoons of olive oil.
2. Once heated, add the rosemary leaves (picked from the sprig), the garlic (sliced finely), the chilli flakes and the almonds. Stir fry the mixture until the garlic turns golden.
3. Add the chickpeas (drained) and stir into the mix. Stir, whilst frying, until the chickpeas have warmed through and begin to take on a little colour. Season well.
4. To enjoy in the office, simply warm in the microwave for a delicious, nutritious lunch your colleagues will envy!
Parmesan & Broccoli Soup
Serves: Two
Preparation time: 10 minutes
Ingredients:
2 pieces of broccoli including tender stalks
1 piece of parmesan rind
Shaved parmesan to serve
1 tablespoon lemon juice
1 tablespoon soy sauce
1. Boil two cups of water in a medium sized pan. Add the broccoli (chopped), the parmesan rind and the soy.
2. Pop the lid on the pan and simmer for 8 minutes, until the broccoli is tender.
3. Blend to a puree in the saucepan using a stick blender. Blend until smooth.
4. Season to taste using salt, pepper and lemon juice.
5. For a scrummy office lunch, simply reheat in the microwave and sprinkle with extra shaved parmesan. Wholesome and ever so tasty!
Hot Pea & Tahini Salad
This recipe can be made from scratch in the office. Just bring in a little bag of ingredients and you’ll have a fresh, tasty lunch in minutes. Who cares if you’re monopolising the kitchenette, eh?
Serves: Two
Preparation time: 5 minutes
Ingredients:
4 handfuls of frozen peas
2 tablespoons of lemon juice
A small bunch of mint
2 handfuls of almonds
4 tablespoons of tahini
1. Boil the kettle and place the frozen peas in a heatproof bowl.
2. Pour the boiled water over the peas and leave for 2-3 minutes until the peas have defrosted and appear bright green.
3. Drain and dry the peas using kitchen roll. Add a little bit of good quality olive oil, squeeze a little lemon into the mix and season to taste with salt and pepper.
4. Add the chopped mint and whole almonds then serve with a good dollop of tahini on top. Flavourful and great for you!
