Marshmallow Weet-Bix Slices Recipe

Good heavens, how awesome is this! Here's an favourite everyone will love. This Marshmallow Weetbix Slice is easy and delicious and highly addictive too!

Marshmallow Weet-Bix Slices Recipe

Ingredients:

  • 3 Weet-Bix crushed
  • 1 cup self-raising flour
  • 1 cup coconut
  • 3/4 cups sugar
  • 120 gms butter melted
  • Marshmallows
  • 1 cup water
  • 1 cup sugar
  • 1 tbs gelatine powder
  • 2 drops pink gel food colouring to taste

Method

STEP 1 Base: Combine Weet-Bix, flour, coconut and sugar in a bowl and add melted butter.
STEP 2 Mix well and press into a lined slice tray.
STEP 3 Bake at 180C for 10-15 minutes. Allow to cool.
STEP 4 Marshmallow: Dissolve sugar in water in a saucepan over low heat. Soak the gelatine in a little water. Add the soaked gelatine to the sugar and stir until dissolved.
STEP 5 When cool, put mixture in a bowl and beat at high speed adding vanilla and pink colouring. Beat until thick.
STEP 6 Pour over cold biscuit base and sprinkle with chopped nuts or coconut.
STEP 7 Allow to set before cutting into slices. Store in refrigerator.

Notes

Make sure the marshmallow is quite cool before beating as I have tried to speed up the process and found the mixture separates. Any flavours may be added to the marshmallow. We have tried lemon essence and yellow food colouring.
