Ingredients:
- 3 Weet-Bix crushed
- 1 cup self-raising flour
- 1 cup coconut
- 3/4 cups sugar
- 120 gms butter melted
- Marshmallows
- 1 cup water
- 1 cup sugar
- 1 tbs gelatine powder
- 2 drops pink gel food colouring to taste
Method
STEP 1 Base: Combine Weet-Bix, flour, coconut and sugar in a bowl and add melted butter.
STEP 2 Mix well and press into a lined slice tray.
STEP 3 Bake at 180C for 10-15 minutes. Allow to cool.
STEP 4 Marshmallow: Dissolve sugar in water in a saucepan over low heat. Soak the gelatine in a little water. Add the soaked gelatine to the sugar and stir until dissolved.
STEP 5 When cool, put mixture in a bowl and beat at high speed adding vanilla and pink colouring. Beat until thick.
STEP 6 Pour over cold biscuit base and sprinkle with chopped nuts or coconut.
STEP 7 Allow to set before cutting into slices. Store in refrigerator.
Notes
Make sure the marshmallow is quite cool before beating as I have tried to speed up the process and found the mixture separates. Any flavours may be added to the marshmallow. We have tried lemon essence and yellow food colouring.
