Tannie Kieta’s Cucumber Salad Recipe

Cool, refreshing Cucumber Salad is delicious any time of the year. This delicious salad was made by Tannie Kieta. Tannnie Kieta and Oom Willie van der Merwe where my kids godparents and was very dear to our family, having no children of their own, they spent many Sundays with us, going boating or just having a braai. Needless to say Tannie Kieta’s Cucumber Salad was a winner every time as she made the salad on most occasions. Whenever we have our family gathering the Cucumber Salad has to be on the menu. This salad goes very well with Leg of Lamb, Pork or braai and is delicious just as a meal by its self on hot a summer day.

Ingedients:

  • 1 Cucumber – coarsely grated about 500ml
  • 1 Tumbler cottage cheese (smooth or chunky)
  • 1 Onion - grated
  • 250ml Mayonnaise
  • 1 Packet green jelly (Greengage or if not available, lemon)
  • 250ml Boiling water
  • Fresh dill (optional) sliced finely (when sliced about a tablespoon)

Method:

Add the boiling water to the jelly and stir until dissolved. Let it cool before placing it in the fridge. Make sure not to let it set until you have added all the other ingredients. The jelly must just be very cold.

Add the cottage cheese, grated onion, dill and Mayonnaise to a mixing bowl, mix well then add the cucumber.
Pour mixture in your favourite mould or salad bowl and refrigerate for several hours.
