This Cheesecake does not only look beautiful to impress anyone who sees it, is it simply delicious. You can taste the Amarula and the cheese, it’s simply what all cheesecake lovers love! So easy to make, no baking in the oven!
Ingredients:
- 200 grams digestive biscuits, any brand you like
100 grams butter, melted in the microwave
200ml whipping cream that has been in the fridge overnight as to make sure it is very cold. (I place the mixing bowl and whisk in the fridge overnight as well, to ensure the cream thickens)
4 teaspoons gelatin powder
150ml Amarula Cream liqueur
130 grams caster sugar
500 grams Smooth Creamed Cottage Cheese (full cream)
Method:
Get the cream cheese to room temperature before starting
- Step 1
Use a food processor or roll the biscuits into sandy crumbs and place in a bowl.
Step 2
Melt the butter in the microwave and mix it into the cookie crumbs, mix until combined.
Step 3
Press the biscuit and crumb mixture in a loose base baking pan to form an even layer. Place in freezer while making the cake mixture.
Step 4
Whip the cream until stiff peaks form. Be careful with this, as you might end up with butter.
Step 5
Place the liqueur in a small bowl and sprinkle the gelatin powder all over the surface. Leave for about 3 minutes and then place the bowl over a hot pot of simmering water, heating gently while constantly stirring until all the gelatin has dissolved into the liqueur.
Step 6
Place the cheese and sugar in a bowl and mix until light and fluffy in texture
Step 7
You need to strain the Amarula in the above mixture and mix gently with a spatula.
Step 8
Fold in gently the whipped cream making sure you have covered all the mixture with the Amarula.
Step 9
Remove the loose base pan from the freezer and pour all the mixture onto the crust and smooth out with a spatula.
Step 10
Heat the chocolate in a bowl over boiling water, when melted. Add a few blobs of chocolate on the cake and make patterns using a toothpick or pour a pattern with the chocolate.
You can place fresh fruit or nuts on top of the chocolate.
Refrigerate for at least 5 hours before serving.
When ready to serve, dip a knife into hot water and dry it. Run the knife along the edges of the cheesecake and remove the pan rim gently.
If you want to place fruit on the op of the cheesecake, remember to cut your your fruit in smaller sizes to ensure easy slicing.
