Baked bean stew with Pap rings

Its not only the Americans that enjoy beans, we South Africans love it.. This recipe is nothing more than a collecting of things in the kitchen but the result is surprisingly good. It involves minimal effort. Beans are known to help lower cholesterol, so keep a variety of them in your cupboard. They're great for stews, soups and salads.

Baked bean stew with Pap rings

 

Preparation time: 10 min
Cooking time: 30-40 min

Serves 4-6

INGREDIENTS:

  • 1 L (4 cups) water
  • salt
  • 500 ml (2 cups) Maise meal
  • 30 ml (2 tbsp) rosemary
  • 15 ml (1 tbsp) parsley

For the Bean Stew –

  • 30 ml (2 tbsp) oil
  • 2 onions, finely chopped
  • 3 large cloves garlic, finely chopped
  • 1 green pepper, cubed
  • 1 red pepper, cubed
  • 1 yellow pepper, cubed
  • 30 ml (2 tbsp) mixed herbs
  • 1 can (410 g) tomatoes
  • 1 can (410 g) baked beans
  • salt and pepper

METHOD:

1. Pap rings: Boil the water and add the salt in a medium-size saucepan. Reduce the heat and add the mealie meal without stirring. Cover with the lid and cook for about 10 minutes.

2. Add the herbs and stir until well combined. Cook for a further 10 minutes until the pap is stiff and it makes one big lump and is not crumbly. Transfer to a lightly oiled surface and press using your hands until flat. Cut into rounds and grill for 5 minutes until a bit crunchy. Set aside in a warm place.

3. Bean Stew : In the meantime, heat the oil in a frying pan and fry the onions, garlic and peppers for four minutes until slightly soft.

4. Season with mixed herbs and pour in the tomatoes. Reduce the heat and simmer for eight minutes. Add the baked beans and cook for a few more minutes. Season with freshly ground pepper to taste and serve with the pap rings.

TIP Red kidney beans also work well in this dish.
