Liver is an irreplaceable source of various nutrients which are very important for human health. It has biggest concentration of a vitamin A comparing to all other food sources; natural source of vitamin D, B12 and C, phosphorus and copper; it is high on protein of animal origin; and the most important, it is rich source of easily absorbed iron – that made liver a part of the treatment for pernicious anemia.
Ingredients:
- 500g Ox Liver
- 3 Onions, pealed and sliced
- 2 Tablespoons olive oil
- 5ml Salt, 2ml pepper,and 5ml spices of your choice. (Braai spice will be perfect)
- 3 Tablespoons Olive Oil
- 3 Tablespoons flour
- 1 Tablespoon garlic
Method:
Panfry the onions until golden brown with a little olive oil, then add the garlic and set aside.
If you got liver in a whole piece then clean it (remove hard vessel parts) and slice in pieces, not too small.
Put a skillet on the moderate heat add 2-3 tbsp of olive oil. While skillet is being warmed up, pour flour into plate, then roll several pieces of liver one by one in flour.
Fry the liver in the hot oil evenly on each side and remove them to a big plate and season with a salt pepper and spices. Then proceed with frying rest of the liver.
I then mixed the fried onions with the liver before serving.
Liver should not be fried too long as it will lose its softness. Serve with vegetables, mashed potatoes, rice or ‘lekker’ Mieliepap.
