Ingredients
Filling;
- 1 cup lemon juice
- 2 tablespoons maizena
Method
Mix well and add:
- 2 cans condensed milk
- 4 egg yolks, well beaten
Mix well and set aside
Topping
- 4 egg whites beaten
- 200ml castor sugar
- 100ml icing
Method:
Beat egg whites and then add little by little caster and icing sugar until nice and stiff.
Crust
- ¾ packet of Marie biscuits (part fine)
- 62.5 ml margarine
Method:
Melt margarine in microwave and mix in cookies and press in round pie dish (25cm diameter and about 5cm deep)
Pour in the filling and top up with the meringue slightly scalloping with a fork.
Bake 25 minutes at 160 ° C
