Great for party snacks or a treat with your afternoon tea. Snowballs bring back memories of family get-togethers and leisurely afternoons after a superb Sunday lunch.
Ingredients
Makes about 12
625ml (350 g) Snowflake self-raising flour
1ml salt
125g butter or margarine
250ml (210 g) castor sugar
125ml sour milk or buttermilk
5ml vanilla essence
125ml (165 g) smooth apricot jam, plus extra 45 ml for spreading
125ml water
A few drops red food colouring
250ml (80 g) desiccated coconut
Method
- Sift flour and salt together. Rub in butter with fingertips until mixture resembles fine breadcrumbs. Add sugar.
- Combine sour milk and essence. Add to dry ingredients and but in with a knife. Knead softly to a soft dough.
- Roll into about 24 balls and place onto greased baking trays. Press lightly with a fork. Bake in a preheated oven at 180 °C for 15 – 20 minutes, until light brown.
- Heat jam and water together to make a syrup. Add food colouring. Spread half of the balls with the extra jam. Sandwich two halves together and dip in the warm syrup.
- Roll snowballs in coconut and leave to cool. Store in an airtight container.
