It is important to use a heavy saucepan if using on stove. Apparently no one can remember who made this beautiful pot first, but it is a popular dish at all community rallies.
Serves 8 people
Preparation time 15 minutes
Cooking time 1 hour
Ingredients:
- 3 Onions, sliced
- 1 Large butternut, sliced
- 8 Potatoes, sliced
- 4 Sweet potatoes, sliced
- 2 Cups squash or beans
- 125-250 g Butter
- 1 Packet brown onion soup
Method:
Grease a large pot (at least no. 3) with butter. Pack the vegetables in layers in the pot, with a sprinkling of soup powder and a few lumps of butter between the layers. Finish with a few big lumps of butter on top and serve.
Leave the pot for 1 hour on hot coals and put a few coals on the lid. Make sure the coals stay hot, but do not let the pot burn. DO NOT STIR! When vegetables begin to caramelize at the edges you will notice the vegetables are tender throughout.
