(Makes about 15 Roosterkoekies)
- 125 g (225 ml) white bread flour
- 125 g (225 ml) flour
- 5 ml salt
- 10 g instant dry yeast packet
- 10 ml sugar
- 155 ml hot water
- little cooking oil
- cheese of your choice, green figs and biltong to place on Roosterkoek.
Combine the bread flour, cake flour, salt, yeast and sugar in a mixing bowl. Add the hot water and mix until stiff dough. Knead the dough for at least 10 minutes. Place the dough in a bowl and rub a little cooking oil on top. Cover the bowl with plastic wrap and let stand in a warm place until the dough has risen double in size. Knead and shape into a long sausage. Cut the dough in small pieces and form the cakes. Let them rise again for about 15 minutes. Place the cakes on the grill over medium coals and toss and turn until cooked or grill on a griddle pan doing the same as on the braai until cooked.
