Ingredients: . \u00a01kg white bread flour \u2022 1 tsp salt \u2022 1 tbsp. sugar \u2022 10g instant dry yeast \u2022 60g butter, cut into small cubes \u2022 600 ml lukewarm water Method: \tMix the flour, salt, sugar and yeast together. \tAdd the butter into the flour mixture, rubbing with your fingertips until mixture resembles crumbs. \tAdd the water to the dry ingredients to form a soft dough. \tTurn dough out onto a floured surface. Knead until smooth and elastic. \tPlace the dough in a large greased bowl. Cover with cling wrap and allow to stand in a warm place until doubled in size. \tKnead the dough again and shape into 12 balls. \tPlace them onto a greased pan and allow them to stand for a further 10 minutes. \tFlatten the balls slightly and sprinkle with a little flour. \tCook over low fire for 10 minutes on each side. \tTap the \u2018roosterkoek\u2019 with your fingers and if it makes a hollow sound, it\u2019s done.
