- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 120g chorizo, diced
- 2 x 400g cans chopped tomatoes
- 1 tsp caster sugar
- 600g fresh gnocchi
- 125g mozzarella ball, cut into chunks
- small bunch of basil, chopped
In a medium size pan, heat up the oil on medium heat. Add onion and garlic, fry until soft and translucent. Add the chorizo and sauté for 4 minutes. Add the tomatoes, sugar and season to taste. When it begins to simmer, add the gnocchi. Cook gently for 10 minutes, making sure it doesn’t stick to the pan.
Add most of the mozzarella and the basil to the gnocchi. Place in an oven dish, top with the rest of the mozzarella and grill for 5 minutes. Season with black pepper and a few more leaves of basil.
