Mealie cake is another South African favourite. It is always better to use fresh mealies instead of sweetcorn but because mealies are seasonal they are not easy to find. If you do use sweetcorn, off the cob is always tastier and fresher than from the can.
There is also a savoury variation of this cake – in which you add onions, spices and chilli – and leave out the sugar.
Ingredients
150g soft butter
1/2 cup sugar
3 eggs
5ml vanilla essence
4 mealies
1/2 cup flour
3 tsp baking powder
1/4 tsp salt
Method
Preheat your oven to 180°C. In a mixing bowl, cream together the butter and sugar until pale in colour. Add the eggs one at a time, beat well after each addition. Add the rest of the ingredients and mix well. Depending on the shape you prefer, you can bake it in a cake tin or a loaf tin. Grease well and pour in the mixture. Bake for 45 minutes.
