Meatloaf is not a typical South African dish but if you try it once, you’ll find it both delicious and easy to prepare. It’s a quick on-the-go meal for the kids or if you’re running late to prepare dinner. You can add boiled eggs to the centre before you bake for a slight variation. You can also pack in some veggies to add to the flavour.

Meatloaf Ingredients:
- 1kg lean beef mince
- 1 medium onion, chopped finely
- 2 eggs
- 3 garlic cloves minced
- 3 TBS tomato sauce
- 3 TBS chopped fresh parsley
- 3/4 cup Panko breadcrumbs
- 1/3 cup milk
- 1 ½ tsp salt or to taste
- 1 ½ tsp steak spice
- ¼ tsp ground black pepper
- ½ tsp ground paprika
Sauce ingredients
- 3/4 cup tomato sauce
- 1 ½ tsp white vinegar
- 2 ½ TBS brown sugar
- 1 tsp garlic powder
- ½ tsp onion powder
- ¼ tsp ground black pepper
Method
Line a loaf tin with baking paper. Heat your oven to 180°C. In a bowl, add the ingredients for the meatloaf and mix together. Do not over mix, as this hardens the meatloaf. Add the meat mixture to the loaf tin, and pat down gently until it is packed tight.
In a bowl, add the sauce ingredients together. Spread over the meat mixture and bake for 25 minutes or until meat is cooked. Rest for 8 minutes before serving with a side salad or veggies.
