Ingredients
- 400g can chickpeas, rinsed and drained
- 2 TBS fresh lemon juice
- 2 TBS olive oil
- 1 red chilli, chopped
- 1 garlic clove, crushed
- 260g jar chargrilled red pepper, drained
- Toasted pine nuts
Method
Place all the ingredients – chickpeas, lemon juice, oil, chilli, garlic and red pepper in a food processor. Process until combined. Season to your liking. Place in a serving bowl and sprinkle with pine nuts. Enjoy with raw vegetables or toasted pita bread.
